Supreme Pizza Frittata
Ingredients
1 pound hot Italian sausage
12 eggs
1 cup pizza sauce
1/4 cup fresh basil, torn into small pieces
pinch of salt
pinch of black pepper
red pepper flakes, to taste
1 green bell pepper, sliced
6 button mushrooms, sliced
6 pepperoni slices
2 cups arugula
juice of 1/2 lemon
1 tablespoon olive oil

Instructions
Preheat oven to 350 degrees F.
Place a large cast iron skillet over medium heat. Add sausage and use a wooden spoon to break into small pieces, until no pink remains. Spread sausage evenly throughout the skillet. Turn heat down to medium-low.
In a large bowl, whisk together eggs, basil, pizza sauce, salt, pepper, and red pepper flakes. Pour mixture into skillet and let cook in the pan for 5 minutes. Then top the frittata with green pepper slices, mushrooms and pepperoni. Place in oven to bake at 20 minutes.
Toss arugula in lemon and olive oil and place on top of frittata before serving!
Crispy Buffalo Chicken Bites
Ingredients
For the crust
1 lb. organic chicken
¼ cup avocado oil
Batter
2 eggs
½ cup tapioca flour
½ tsp. Pink salt
¼ tsp. Black pepper
1 tsp. Hot sauce (I use Tessemae’s Buffalo Sauce)
Sauce
⅓ – ½ cup hot sauce (I use Tessemae’s Buffalo Sauce)
2 TBSP grass-fed butter

Instructions
In a skillet heat oil until hot. Cut chicken into bite-size pieces.
In a bowl, combine batter ingredients. Place chicken into batter and toss until coated. Carefully place chicken into hot skillet.
Let cook for 4-5 minutes on each side. Remove from skillet and place on a plate lined with paper towels.
In a skillet, heat hot sauce and butter over low heat until combined. Add in chicken and toss until coated.
If you want your chicken extra crispy, after this step transfer chicken to a lined baking sheet and broil for 2-3 minutes on each side, watching carefully.

Elvis Burgers
Ingredients
4 slices sugar-free bacon
2 medium bananas, peeled and diced
1/4 teaspoon ground ginger
1 pound ground beef
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup sunflower seed or almond butter (no sugar added)

Instructions
Preheat a gas grill with all burners on high, lid closed, 10-15 minutes.
Mix the ground beef with salt and pepper and shape into four patties. Gently press down the center of each patty until it’s about 1/2-inch thick to make a slight depression; this will prevent them from turning bulbous when you cook them. Grill patties, uncovered and without pressing down on them, until they’re seared on one side, about 3 minutes. Flip the burgers and continue grilling to desired temperature: 3 minutes for rare, 4 minutes for medium, and 5 minutes for well-done.
Note: You can also pan-fry or bake the burgers. On the stovetop, cook in a nonstick skillet, 5 minutes, then flip and continue to cook: 3 minutes for rare, 4 minutes for medium, 5 minutes for well-done. In the oven, bake at 400F for 20-25 minutes.
While the burgers are cooking, cut the bacon into 1-inch pieces. Place in a cold, nonstick skillet, then turn heat to medium-high and cook until browned and crisp, about 5 minutes. Remove the bacon to a paper towel to drain. Pour all but 1 tablespoon of the bacon fat out of the pan. Add the bananas and ginger to the pan and sauté until soft and lightly browned, about 3-5 minutes. Set aside.
Place the sunflower butter in a microwave-safe dish (or saucepan) and heat until thinned, about 40 seconds in the microwave.
When the burgers are good to go, top each with 1 tablespoon of melted sunflower butter and a few tablespoons of the bananas, then sprinkle with bacon. Feel free to sing your favorite Elvis tune while you chow down. I like this one because this burger is a hunka hunka burnin’ yum.
Apple and Arugula Bison Burgers
Ingredients
Homemade sweet potato fries (optional)
3 tablespoons coconut oil or butter
1 large yellow onion, thinly sliced
salt, to taste
1 pound ground bison (or other ground meat such as beef, turkey or chicken)
1 eggs
1 small green apple, finely chopped
1/2 cup chopped arugula + extra for garnishing burgers
2 garlic cloves, minced
1/4 teaspoon coarse sea salt
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
extra coconut oil or butter, to coat pan

Instructions
Make sweet potato fries and biscuits, if preparing with your meal.
In a medium saute pan, add coconut oil along with onion and a bit of salt. Coat in oil and let cook for 15-25 minutes, stirring occasionally until onions are soft and brown.
When onions are almost done cooking, place beef, egg, apple, arugula, garlic cloves, salt and pepper, and garlic powder in a bowl and mix well to combine.
Form 4-5 patties, pressing a thumb into the middle to keep the burgers from puffing up.
Heat a large sauté pan over medium heat. Add a bit of coconut oil or butter to grease the pan. Then add patties, making sure not to crowd the pan. Cook on both sides for 5-6 minutes or until patties are cooked to preference.
Make patties with half of a biscuit, arugula, burger patty, and onions.
Barbecue Rub Sliders
Ingredients
1/2 cup Onion, sliced (about 1/2 onion)
1 Tbsp Ghee, or olive oil
1 lb Ground Beef
2 tsp Primal Palate Barbecue Rub
3 pieces Bacon, cut in half
6 pieces Lettuce, Iceburg, or Romaine. Large leaves to wrap burgers
1 whole Roma Tomato, sliced

Instructions
Begin by preheating your grill to medium high heat (about 500 F).
Slice the onion thinly and saute in butter/ghee, or olive oil over medium heat. Gradually reduce to medium low, stir occasionally.
Cut strips of bacon in half, and place in a cast iron skillet. Heat over medium heat, and cook until bacon is crispy, flipping it occasionally. Set aside.
Mix your ground beef with the Primal Palate Barbecue Rub (about 2 tsp, more or less depending on how strongly you want the burgers seasoned.) Form into 6 patties of equal size.
Place the burgers on the hot grill, and cook for approximately 4 minutes per side, depending on the thickness and how done you want them. Ours were about 1″ thick, and this yielded a medium-done burger.
While the burgers are cooking, get your lettuce wraps and toppings ready (slice tomato, get any condiments ready).
Assemble the burgers inside large lettuce leaves with tomato, sauteed onion, mustard and ketchup (if desired), and bacon. Spear with a toothpick for easy serving. Enjoy!
Triple Protein Burgers
Ingredients
1 pound ground beef
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt and pepper, to taste
8 strips of bacon
4 hot dogs (nitrate and filler-free- I used Coleman Natural hot dogs)
1/2 white onion, thinly sliced
1 avocado, sliced
5–6 tablespoons leftover homemade mayo
head of romaine lettuce

Instructions
Preheat oven to 350 degrees.
Place bacon on a baking sheet and cook bacon for about 15 minutes until just slightly crispy.
In a large bowl, mix together ground beef, cayenne pepper, smoked paprika, garlic powder, onion powder, and a little salt and pepper. Then form in 4 patties.
Cut hot dog down the middle to butterfly the hot dog.
Place beef patties on the grill and cook on both sides until you get however you like your meat cooked. I cooked mine for about 4-5 minutes per side for medium-rare.
When flipping the beef patties, place butterflied hot dogs on the grill and flip after about 2 minutes.
When all meat is done cooking, place a beef patty in a lettuce leaf, top it with mayo, then a hot dog, then bacon, than any other fixings you like. I used onion and avocado on my burger. Then top it with one more piece of lettuce.
